Just a quick wee post from me today. Hubster has the week off so I have been running about the house like a mad woman trying to make to most of an extra pair of hands. Naturally this means I have taken on a million projects. On the positive side I will have much to write about in the near future. For now, however, I have only a jumble of half finished piles of fabric, yarn and other miscellaneous craft paraphernalia taking over the house.
The Little Shark has a milk, soy and egg intolerance that he is (thankfully) slowly growing out of. I have just started to add a few egg-based items back into my diet but am still weary about giving them to him to ingest directly (screaming baby all day and night – no thank you). Thus I have been tinkering with recipes to make them Shark-o friendly but still delicious because let’s be honest I am far too lazy to make two batches of anything!
Today we mastered the humble pikelet. Delicious, easy to eat with three teeth, and most importantly dairy, egg and refined sugar free!!
- 1 C plain flour
- 1 t baking powder
- 1 Banana
- 1/4 t salt
- 1/3 C of apple sauce
- 1 C your choice of milk-alternative (we love almond or oat)
Sift flour, baking powder and salt into a bowl. In another bowl beat applesauce and banana until well mixed, add milk and mix to combine. Add the wet ingredients to dry. Mix until just combined (they can go rubbery if you overmix). Drop a tablespoon full of mixture onto a hot, non-stick pan. Turn pikelet over when bubbles start to burst on the top surface. Cook the second side until golden.
*If you want to include eggs still just replace the apple sauce with one egg.
* Take the comment about over mixing seriously, these will go ridiculously rubbery if mixed too much, make sure your milk, applesauce and banana are well mixed before adding to the dry ingredients.
